Healthy Snack in 15 Minutes

We have all had those times when you get home from a long day of school or work and just can’t find the strength to fix a healthy snack before we get on with our lives. When this happens we often turn to the unhealthy foods that linger in the shadows of the pantry. Well lucky for you, your savior has arrived. That’s right, the wonderful, the amazing, the Mediterranean Cucumber Roll Ups have arrived.

These “Roll ups” provide a healthy snack that takes less than 15 minutes to make. For this recipe you will need.                                                                                                                                                                  1 Large Cucumber                                                                                                                                                ⅛ tsp. of ground black pepper                                                                                                                        6 tbsp of roasted garlic hummus                                                                                                                                                 6 tbsp chopped roasted red peppers                                                                                                                              6 tbsp of crumbled feta cheese

The first step to creating a cucumber roll up is to use a vegetable cutter or a knife to cut thin layers of of the cucumber. Throw away the slices from the inner cucumber to avoid the seeds. Then sprinkle a pinch of black pepper across the slices of cucumber. Next evenly spread the hummus across the cucumber slice and sprinkle the red pepper and the crumbled feta onto the cucumber slice. To finish the recipe, roll each slice and then stab the roll with a toothpick.  One serving size is 2 rolls and contains 64 calories only.
